MMPs are zinc-dependent proteases. All MMPs are multidomain proteins and their activities are regulated by tissue inhibitors of metalloproteinases. Prevention of pathologies created by MMPs uses synthetic and natural inhibitors. This review will explain the attitude of MMPs and some chemical and physical factors that, depending on their high or low level, could affect the activity and synthesis of MMPs such as caffeine, one of the components of snake venom, melatonin, serotonin, stress factor, vitamins E and C.
